With a Lap-Top that only has small Hard Drive, if I add a USB-C hard drive (LaCie STFD2000402 Porsche Design 2TB USB-C Mobile Hard Drive) to store all the games, will the drive be fast enough to keep up with all the games?

As long as you have a USB 3+ port and compatible drive, it should not be an issue. I tried installing Steam and Doom VR on a 4TB WD external with a Alienware lappy. I didn't notice any slowdowns as long as I used a powered USB hub.
